How to Measure Rice Correctly

The most important distinction for rice is whether the amount refers to raw rice or cooked rice. A recipe calling for one cup of uncooked rice is not equivalent to one cup of cooked rice. When possible, measure rice in grams before cooking and follow the recipe’s specified water ratio.

Confirm whether the rice is raw or cooked. Select a raw option for rice before it absorbs cooking water, or select a cooked option when measuring a prepared portion.
Use a scale for dry recipe amounts. Place a bowl on a digital scale, tare it to zero and add rice until the required gram amount is reached.
Level cup measurements. If using a cup, fill it with rice and level the top without intentionally pressing or heaping the grains.
Do not use cooked volume to infer exact dry yield. Cooking method and hydration vary, so measure the form the recipe specifies instead of relying on a universal yield ratio.
