How to Measure Cream Accurately

Cream is easier to measure consistently by volume than flour or other dry ingredients, but thick or cultured products can cling to a measuring cup. For precise baking or large batches, a scale remains useful.

Choose the matching cream product. Use heavy cream for heavy cream recipes, and select a thicker or non-dairy option only when it matches the ingredient being measured.
Use a liquid measuring cup for pourable cream. Pour the cream onto a level surface and read the measurement at eye level.
Weigh thick products when possible. Crème fraîche, sour cream and coconut cream may adhere to the cup; grams are simpler and more repeatable.
Do not confuse fluid ounces with weight ounces. Fluid ounces describe volume. Weight ounces describe mass and depend on the product being measured.

Pourable Cream

Heavy cream, light cream and half-and-half are easily measured in milliliters, cups or fluid ounces. The calculator also converts them to recipe weights.

Thick or Cultured Cream

Dairy Cream Products
